The biggest difference between Kale and Spinach is that spinach has oxalic acid which can interfere with calcium absorption. So, if you are having problems with low calcium and week bones/teeth, kale is a better alternative. For my breakfast, I am eating whole grain brown rice topped with kale, mushrooms, and of course, onions.
I love slightly warmed onions.
