Dinner: Mexican-Inspired on Wednesday

Usually, Tuesdays are my Mexican-inspired dinner days. But, I had the taste for quesadillas today. I fixed Cam and Cayla cheese-spinach quesadillas with buttered rice and creamed broccoli.
