8/1/2021: The Chambers’ Family Kitchen: Homemade Cupcakes, Lemonade Popsicles, & Peanut Butter

Saturday’s family cooking got delayed to today. I spent most of the day (after going to the Farmer’s Market with the kids) working on something I have been procrastinating on for the past two weeks. So today, we made cupcakes, lemonade, peanut butter, and strawberry lemonade popsicles. It’s been several weeks since we were in the kitchen makings something. Both Cam and Cayla were eager to help.
It’s amazing how you can make some of your favorite foods from just a few ingredients. Here is the link for the cupcakes we made. Instead of using sugar, we used Swerve.

In this photo, Cayla spilled some #Swerve while pouring it into the bowl. Her words exactly were, “that’s for me.”
Check out Cayla; she sounds like a pro describing what she’s doing. Unfortunately, I couldn’t think of the name of cupcake liners.

Cam made the peanut butter and squeezed the fresh lemons for the lemonade and popsicles. Peanut butter (unsalted peanuts +extra virgin olive oil + Swerve) + food processor and Popsicles (1/4 cup or more of freshly sliced strawberries + 4–5 cups freshly squeezed lemonade + 1 cup to 1 1/2 cup of Swerve) and mix.


I love making popsicles with less than five ingredients.

Every Storm Teaches. Are you Listening?

Whenever there was a storm, my mother instructed us to sit in one room until the storm was over quietly. And, whatever we were doing (eating, fixing a meal, watching television) had to wait until “God was done with His work.” But, what I didn’t know at the time is how this training spilled over in helping all of us handle adversities.
Secretly, I believe we all enjoyed the break from routine. The quiet time gave us all time to reassess our lives. Before resuming our planned activities after the storm, my two brothers, our mother, and I would sit around and tell family bloopers or reveal some new understanding about life issues. Later I realized that although a storm can bring about chaos, it is possible to achieve calmness during a storm. Also, we make the most out of storms by achieving stillness and going within ourselves to bring about revelations, including a new way of handling future storms.
I learned a long time ago that teachers aren’t always fit the stereotype ( older, bald head, fancy robe, mustache or clean face, etc.). Not all teachers are human. Sometimes our teachers bring chaos, but it is up to us to take advantage of the still moments. The two family members who misused my developing body were my teachers. With their help, I learned some things about myself, including learning to trust myself and the Voice within.
Even the absence of something can teach you something. An absent father, another storm, taught me to address my emotions and feelings instead of relying on external comforters.
Whatever you are experiencing didn’t come overnight. However, storms can be an opportunity to put our life in order. Some of the questions you can ask yourself include:
- What’s keeping me from experiencing a peace that surpasses understanding?
- What storms are you experiencing, including coronavirus, and how are you handling them?
- How am I showing love to the ones I profess I love?
- How am I not showing Love to the ones I profess I love?
- What emotions and feelings haven’t I dealt with?
- How can I efficiently maximize my energy, experiences, money, and time? Are you doing what you love to do? Do you feel limited at work?
